The Cava is made by a group of forward thinking producers in Spain.  Aelder is made by two foraging chefs.

Masia Bou Brut has notes of ripe apples and pears with hints of citrus; it has great bubbles too. It makes a very pleasant aperitif.

Masia Bou Cava is made at the Cellars de L’Arboc winery in the village of L’Arboc. The winery brings together nine award-winning winemakers, who each produce their own wines as part of a cooperative.

Aelder is crafted by Rupert Waites and Thomas Chisholm. Rupert grew up in the Scottish Highlands while Thomas spent his formative years in Norway. Both have a deep rooted connection with nature.

Masia Bou Cava

  • Blend: 40% Xarel.lo, 40% Macabeo and 20% Parellada.
  • ABV: 11.5%.
  • Bottle size 750ml.
  • Dosage: 10g/l.
  • Aged for a minimum of 10 months.

Aelder Wild Elderberry Liqueur

  • Blend: Young whisky chosen to compliment the elderberries and infused with wild botanicals – Elder, Sweet Woodruff , Hogweed Seed, Yarrrow and Meadowsweet.
  • ABV: 17%.
  • Bottle size 500ml.

Each one of the wild, Scottish ingredients is handpicked throughout the seasons to ensure they are at their absolute best. These are then carefully dried to preserve their flavour, before infusing with the wild berries to the secret recipe in each batch of Aelder.
Seasonality, sustainability and patience all play a vital role in ensuring the quality of the elixir.
