When we taste, after popping the cork, the first thing we do is ‘get our beaks in’ ie take a good long sniff to see what amazing aromas our noses can detect.
This September, we have ‘beaked’ and ‘sipped’- on your behalf, three different bottles. Reflecting the dreamy low light of early Autumn and the desire to hunker down with some delicious fizz and food … this champagne would be great with a creamy pasta dish or a fish and chip supper. On the ‘beak’ front, we savoured traces of crisp green apple peel; the caramelized topping of a crème brulée, wisps of vanilla and a sprinkling of freshly toasted nuts.
Before we reveal out ‘sipping’ findings – for those of you interested in the term ‘blanc de blancs… translated literally, it means ‘white of whites’. Hence this champagne has been made using 100% white grapes, the chardonnay grape specifically, because this is the white grape of the Champagne region.
Now back to the sipping bit … the crispness from those green apple peelings continued, with an added whoosh of sherbet, a slice of refreshing citrus and delicate notes of vanilla.
