Forget-Chemin Heritage champagne

When we taste, after popping the cork, the first thing we do is ‘get our beaks in’ ie take a good long sniff to see what amazing aromas our noses can detect.
This May, we have ‘beaked’ and ‘sipped’- on your behalf, and this is our feedback on a really amazing Champagne – ‘Forget-Chemin Heritage’ – from a small family vineyard.

We suspect that Thierry might just dream about champagne – as well as living and breathing it. He grew up with views of the vines from his bedroom window; the winery was next door. It wasn’t long before he was smelling, tasting and discussing champagne with his father. Fast forward a few years and Thierry has developed a reputation as an excellent champagne producer, winning many awards for his champagnes.

Thierry produces only 95,000 bottles of champagne a year, a mere 5% of which is exported and he makes no more than 3,000 bottles of Heritage champagne.

Back to the ‘beak’ and it’s just you and two tins. As you open the first one and peel back the metal, take in the rich unctuous smell of round, slippery peach halves. The next tin oozes with honeyed silky pears. To these aromas, you can add slithers of nuttiness and a lick of creaminess; a well-honed beak will also sniff out hints of fennel!

This champagne always intrigues us, because Thierry keeps the blend top secret. Each year he will consider his reserve wines, together with the current harvest and create the blend he feels best deserves his ‘Heritage’ label.

On the sipping front, the lusciousness of the fruit shifts to softly baked lemon wrapped in a fresh mineral saline whoosh; a mouth-watering finish to a tinned fruit beginning!
